If I am not mistaken,  it is possible but very rare.  If the consulate agrees, she would need to return before before the expiration of the original 90 days if her first entry

That's  right there was a recent case on here of it being done, but you have to contact your embassy and explain and request it. It's up to them. Contact them ASAP

Also, you still must get married based on the original 90 day date (if they get approved to come back).  The expiration on his FIRST visa was December, the expiration on the 2nd visa was September.  Not sure why it was shaved down but didnt question that..

You, and she, need to contact the embassy immediately, explain your situation, and request that the case be re-opened. 
 

Likely answer:  You will have to start over.  A K1 entrant cannot leave / return to the US until after marriage and AP approval.

 

There is a tiny chance that they will re-open but the vast majority of the time the couple has to start over.  I have a friend here whose (now wife) did the same thing and the embassy basically told them “drop dead” in diplo-speak so he had to refile.  She was also in her 90-day window (actually left about 10 days after she arrived) but the embassy wouldn’t play ball and wouldn’t do anything for them.

It was shaved because of the 90 days came into play

As others noted, it is technically possible. But the new visa would need to be issued, used, and you would need to marry by the end of the original 90 days. That appears to be in late January. It's a pretty tight timeline...the consulate may or may not be able to accommodate it so that you can interview with a reasonable amount of time to actually use the visa and marry. I would suggest having a plan for how you will marry so quickly (i.e. a court marriage, Las Vegas marriage, etc.) in case they ask.

Timeline

Now that she’s already gone, tell her to keep contacting the embassy to have an interview soon and assemble the evidences of the emergency with the reason. I hope it’s a real emergency with paper trail evidences not just simple hospitalization case that may infuriate the CO at the interview if granted.
 

Tell her to keep bugging the embassy to try to get the interview before Christmas if possible. It is rumored that the COs will be in festive mood those days.
