What if i don't get the recorded marriage certificate back before the 90 day K1 fiance visa expires?

Some places do take that long.

There is another option. You fly to Vegas. We have a guy who is an official ordained marriage officiant who can get you a marriage certificate within a couple hours while you finish your buffet at the casino. Can somebody tag him please? Loren Y something or another?

OK thanks. But what if I photocopy the original before the officiant files it at the courthouse, or get a file stamped copy at the courthouse when it is filed but that isn't certified?

The "What to Submit (K-1 Non-immigrant applicants)" dropdown on the USCIS website list the documents you have to send in and it says "copy of your marriage certificate" not "certified copy of your marriage certificate"

The marriage certificate is generated by the county/parish (usually court where it’s filed).  The copy you submit will be missing the court stamp or seal. 
Waiting is very low risk.  If the document cannot be obtained (the real one, from the clerk, it is better to wait for it than risk having the package sent back.  They may or may not RFE.

We took the completed marriage certificate from the officiant and went to the court house and got it registered and got our certified copies within 15 minutes. Mailing it in takes much longer.

We were told that it would take weeks. We stupidly waited a few weeks without checking and it had already been available. It may take weeks, but I recommend calling every so often to see if it is already available.

3. File for AoS within and then supplement that filing in a few weeks with a nice copy of the recorded marriage certificate?

Also, after we file for AoS, what paperwork should my fiancee carry with her to prove she is in the country legally?

In L.A. county it takes up to 8 weeks just to get the marriage recorded. It's not the certificate itself that takes a long time to get, it's the recording process that takes forever (or I should say the WAIT to get it recorded, not the process of them actually doing it). I was lucky, only had to wait 4 weeks to get it recorded (called every day to not miss it), picked up the certificate the same day.

All jurisdictions have different requirements for the recording of marriages.  In some counties, the officiant is responsible for sending in the completed certificate, and certified copies are not available until recorded by the county, etc.

I am here, traveling right now, will be back in the US on the 25th of November. Can do the certificate in a few hours during the week pretty easily. I have a couple coming out in December a few days after they clear POE , and we're looking to get it done and filed quickly, like within the first week of arrival, I can respect that, they are not taking any chances.
