I personally did. Try to handwrite the date and maybe a short description (location, what you were celebrating etc) and your signature underneath

Since there is no way for them to verify the date anyway, there should be no issue with writing the dates by hand.

I digitally added a date and caption to each photo: who was in it, where taken, and the occasion. 
 

The photos were then grouped and each group printed to 8.5x11 inch paper.

Is there room to handwrite in the dates? As others have said, I think that would be fine. We sent 14 photos and had the date, location, and who was pictured (though most of them were selfies of just the two of us...but you've gotta work with what you've got).

During my AOS interview, I had brought literal pictures with me. However, the interviewer told me that for future reference (i.e. when I file ROC) I should put the pictures into a word document with the date, location, and names of people in the pictures. So that’s what I did for my ROC package this time around.

Throughout my immigration journey, I have never dated photos, and haven't had any issues.

Nope.  Mostly because I am not sure where to take a photo out on a date.  CVS photo section?  Frame shop?

I scanned to paper and captioned them all with states and who was in it and what was happening.
