You'll need to show your tax returns at NVC. Or start lobbying for for a co-sponsor.

Op, and in this case you'll definitely need a co-sponsor for sure. Read up on I-864 affidavit of support and prepare yourself.

Aside from  requirements for immigration    petitions  USA citizens aren’t required to file tax returns unless they owe taxes.  Give the foreign earned income exclusion is about $100K, based on your posts you are fine.

Not for K1 but this is an immigrant spouse visa case,so they do accept "joint sponsors".

The above is not correct.  They are required to file if their total worldwide income is above the filing threshold whether they owe taxes or not.
