You have to meet all 3 requirements, not only #3. Since they are eligible for a SSN because they have an EAD, they don't meet #1, therefore they can't apply for an ITIN.

The only proof of marriage you have to send with the application is the marriage certificate. Nothing else.
All other evidence, you will bring to the interview. So you have months and months ahead to get an ID for him, add him to the bank account. Again, no other evidence is required at time of filing, only marriage certificate.

I disagree when people say they know what they're doing. This is a clear case of doctor trying to make money out of the situation. There's a post here in the forum called "Civil Surgeons that doesn't rip you off", something like that. Read the post and try to find a doctor near you. Call doctors at different cities around you too, even if you have to drive a couple hours, it will still be cheaper. The requirements for vaccines for kids are different than adults. Find the vaccine that your kid needs, and have them taking it at a drugstore, for example. Them have the doctor to fill out only the vaccination part of the form.

After 90 days they are out of status. The pending AOS grants them a period of authorized stay until a decision is made. So the difference is that this period doesn't count as unlawful presence for future applications.

Your wife has being resident for tax purposes since the first year you filed jointly with her. Since she was abroad, you most likely filed with a ITIN number, that's why you haven't received the first stimulus. If she has a SSN by the time you file taxes, she will be eligible for the first two stimulus on this return, the third one will come either after this one is filed or when 2021 return is filed. You, the USC, are eligible for all 3 as well...

Unfortunately you will have to find another job or find a joint sponsor if you want to sponsor your parents after naturalizing.

You already sent a 864 for her mom. No need to send a new one unless it was specifically requested again. For your wife you select 1a.

Yes. The USC spouse is always the main sponsor, even if they don't meet the requirements, so they also have to fill out a 864 and send all the required documents with it, like tax returns, for example.

No. You only have one joint sponsor, not two. You don't need a new 864 for her mom, only your wife.

These are not field offices. These are service centers. Like I said, you send your marriage based AOS to the Chicago lockbox and they will send it to the NBC. That's the service center that will handle your case, like everyone's else.

It's supposed to be the physical address. But there are many cases where people were scheduled for an interview at their mailing address location.
