Urine test, blood test, x-ray. Nothing in detail. They will do exactly the same check-up as employment check-up or college check-up.

I don't see anyone stating that you are planning to skip the step. What others try to highlight is, we know you are planning to get married in both country (Mexico and US), then submit for AOS. However, the order of the married is very important. If you decided to married in Mexico first, after that US, you need to apply for Spouse visa instead of K-1 Visa. If you continue with the K-1 Visa (even after you married her at Mexico, by assuming that US will never know about the marriage that already happen at Mexico) it is consider visa fraud. 
 
No one will jump into conclusion if you never stated the sentence "I assume U.S would never know". Once you stating that, it is clearly stating that you are considering to go through K-1 Visa even after officially married at Mexico. 
 
I totally understand you want to get married in August because it is something to do with the religion. However, you need to understand the difference between K-1 Visa and Spouse visa. Everyone want to marry the love of their life as soon as they can. But, they are doing it in right way. 
 
For me, I rather being with the love of my life as soon as I can (that is the reason why I being patient and go through K-1 Visa process). 

If you have decide to marry her at Mexico, you need to cancel your K-1 visa and apply for spouse visa after you married her. K-1 Visa is for a couple who are engaged and will move to States and get marry here. Don't take a risk by assuming "US would never know". Still proceed with K-1 Visa even after plan to married before enter to U.S is consider as Visa Fraud. Therefore :

1) If you really want to get marry at mexico first - cancel your K-1 and submit your application for spouse visa
2) If you decide to marry at U.S first then do ceremony at mexico - continue with K-1
 
** Never lie to immigration officer and never plan to commit a visa fraud

I have my green card interview on September last year. During that interview, first thing the lady ask me is "Do you have a joint account together?" I said, we don't have any, but, I have insurance under my husband, my name stated as the beneficiary of his life insurance and 401k. I even question "do we really need a joint account? Because I don't like the idea of having joint account since I love spending my money on him by buying things unexpected to surprise him and I really don't want he know anything about it since the surprise will not happened because he will know right away if he checking the account balance or account transactions. The lady said that "that is how marriage is, make sure you have joint account prepared before you apply on removal of condition"
 
I know that everyone has their own experience and opinion, I'm here just to share what I go through.

It will be like that until NOA2, unless RFE is issued or they reject/denied your petition.

Finally! I got a job offers this week and I had to choose one of it. It is an amazing feeling knowing that I will start working this coming Monday. However, it is heartbreaking turning down the other offer. Thank you for sharing your experience and advise everyone! Really appreciate it

EAD Approved in 11/6 and mailed 11/7 thank goodness. Now just to resubmit the medical for the GC later today and hopefully this phase of the journey is completed! Thank God!

As long as your police certificate is valid during the interview, it will be valid during the POE. 

Police certificate is needed during the interview. You will need to hand over the police certificate to the consulate officer during the interview. The consulate officer will include it together with other documents in your sealed package. The package that will be pass to the officer at POE.
