I was wondering what the possible case statuses are on the USCIS website for K-1. Mine has been "Case Was Received" since NOA1. Will it be like this until NOA2? Or should it change to something else? Thank you for your help.

It will be like that until NOA2, unless RFE is issued or they reject/denied your petition.

DISCLAIMER: I'm not working with USCIS/NVC and never work with them. All my comment based on my own experience and what I read.

Thank you. Is there a way to check when was the last time my case was touched/reviewed?

The day it was received by CSC.  It won't be touched again until it is on an adjudicator's desk.  Then you will get an update on what they did.

Well, there's an outside chance of a 'name updated' or some other minor action shortly before they issue an approval or RFE. But that's rare.
