Sounds like your application might’ve fallen through the cracks. The biometrics request was issued same month of app submission. Got interview date for 2/12/2 and got the actual green card on hand yesterday.

For clarity, I am the petitioner. Wife is the immigrant.

I think an RFE and interview is more likely than an outright denial as well. There's little to no chance of approval here without an RFE and/or interview, but I haven't seen an outright denial based on lack of evidence for an I-751 in recent history.
I'm not suggesting it is wise to only send the bare minimum required documents, but it's not a game over situation either.

Risk? Yes. Technically you lose status automatically by not filing, although it gets more complicated than that so it's only half true. Basically, you are permitted a continuance and to obtain evidence of LPR status until an IJ makes a final decision. A couple months late filing isn't good, but there have been people in worse circumstances that have removed conditions in the end.

I feel like I have read about other cases here on VJ where they filed too late but things turned out fine anyway. 
 
I would be more worried about the lack of evidence in this case, than the late filing itself.

OP, assuming your filing is accepted and you receive an I-797, I would collect as much real evidence as possible and submit it with that acceptance as a cover page before they issue the RFE. You're dangerously close to not having the minimum required evidence which could cause a straight denial.

This is how I calculate approval rate:
 
Approved   53,060
Denied          1481
Total Adjudicated = 54541
 
53060/54541 =  97.2% approved

Honestly, I did not get a chance to read this portion beforehand (fml). I did include a photocopy of the PRC (front and back) with my submittal. From the Evidence of the Relationship portion, I provided nothing.
 
If an RFE request comes back (which it most likely will), I will provide all those docs at that time. I was in a rush as I was already late to submit the I-751 application

First off thank you for taking the time to put that response together. With the exception of a few sarcastic replies, most are helpful and thats why VJ has grown to what it is today. 
 
Luckily I do have a lot of those documents ready to submit, when the RFE does come in. Unluckily, i did not provide them on initial submittal.

My wife gave birth to our first born, while waiting for her K-3/CR-1 to complete. We hoped it would complete before, but timing wasnt on our side. Nonetheless, your question being would it impact your immigration visa? Not at all. 
 
In some ways, I'm happy my son was born overseas. He now has two passports and can enter many countries visa-free

There is a pinned thread in the beginning of the group started by CookieCat where she explained in details all the documents that she submitted with an example of a cover letter and made it very easy to follow. Take a look at that and gather all the ones that you have and be prepare for a response later on. In your case you should have sent them with the difference of including the reason for the late filing in the cover letter. 

For you and your family's sake, I hope you get one too  

I honestly hope you get an RFE. These days USCIS is denying applications without sending RFEs.
