First of all,  make sure this is what u want to do

and if u have decided completely,  do not attend the interview

But understand many cancel a K1 petition for various reasons like a  disagreement

members have done this and then asked, "can i reinstate my k1 pettion after cancelling it?"

and NO u can't ,  u would have to start from scratch

only USC can cancel

but u can stop it by not going to interview

To be fair to the USC ,  tell the person

Sorry it did not work out for u

Another option would be to attend and tell them in person that you do not wish to pursue the visa.  Depending on the consulate, this may be possible to do via email.

Write a letter : Beneficiary Request to withdraw/cancel Fiance Visa case #xyz

Your name, date of birth

USC petitioner name, date of birth

Simple statement that the relationship has ended , there is no future possibility of reconciliation nor marriage.
Sign it

email it to the consulate and for good measure send a paper copy of letter to the embassy and one to USCIS ( address on copy of I-129 F )…but it is enough to put consulate on notice via email and letter .

You don’t need to attend interview just to cancel withdraw

You can try to make a NVC Inquiry here.

https://travel.state.gov/content/travel/en/us-visas/visa-information-resources/ask-nvc.html

You are the applicant.

Just say "I no longer intend to marry the petitioner.  Please revoke the approval."   Either they will then notify the embassy to send the case back, or else they will advise you who to contact.   It will take about 3 days before they reply to you.

Let us know what they say,.

NVC has no authority to revoke the approval.  Since the case is at the Embassy, any notice/ letter should be sent there, with a copy to USCIS, as others have already said.

I would call or attend the interview in person and tell them that you want to cancel and why you want to cancel. I'll do this so it will be on record on exactly why the k1 was cancelled. This would benefit you incase you want to get another visa to america. This will not look like an attempt by you to come here, which could be used as a "strike" against you in the future. That's my uneducated opinion

Since the USCIS has already adjudicated the petition, sending anything to them is pointless.

It is a hands on practice to alert the center where petition was originally filed as well as location of file ( NVC or embassy ) and helps flag potentially problem -petitioners.
As indicated , not a requirement for OP ..nor as pointless as you state
