Since you had AOS interview, it's unlikely you'll have to do ROC interview. Most AOS interviewees are having their ROC interviews waived so long as their evidence is good. Note that this is not 100%. It's still on a case-by-case basis ultimately. It does make sense for them to not interview couples they have already interviewed only 2-ish years ago (and also, COVID's still around). It seems like most people who are waiting for an ROC interview are those who entered the USA via spousal visa. For spousal visas, the initial interview is done abroad in embassies and consulates, which are not under USCIS. So it would make sense for USCIS to want to do ROC interviews for those cases, but again, this is just the generalized average pattern we're seeing right now. It is not 100% across the board and it never will be because if they suspect an AOS case to be suspicious or weak on evidence, they will call the couple for an ROC interview. As for biometrics, I think you'll probably have them waived but that's not guaranteed either.

Was received 6/11/2021 per USPS
USCIS text message 06/22/2021
NOA/Extension came in on 06/26/2021
Wife's Green Card expires end of July 2021
It's being processed at Texas Service Center for us.

Only if you "reside overseas pursuant to military or government orders" https://www.uscis.gov/sites/default/files/document/forms/i-751instr.pdf
So if you reside in the US then passport photos are NOT needed.

I'd go with your current address, but either should work really.
Yes, update your address online within 10 days of moving. It's technically required but they don't really enforce it...but if you have an existing case then you don't want to miss out on any documents they may send you (RFE, interview notice, etc.). If the I-864 moves as well, they need to complete an I-865 too.
#4 - An alien authorized to work. An EAD will be required as evidence of this. Your timeline doesn't show you having one, but I'm assuming you do since you are completing an I-9. If not, you are not authorized to work.
Once you get a green card, use #3. Also go to the SSA to get a new Social Security card without the EAD restriction.
If you become a citizen eventually, use #1.

That's true but the processing times were significantly faster before Trump too. Trump has made legal immigration harder, covid has made it even worse.
Hopefully this vaccine and Biden's pro immigration stance makes things better

I know that, but it just so happens naturalization versus the others increased by 81 percent and Trump isn't known for being immigrant friendly. Too much of a coincidence to me.

I wanted to address the negative attitudes we have seen on the rise recently in the upper/ immigration forums towards those who ask beginner/ simple questions, or have unusually fast or slow VisaJourneys.
First, there is a tone difference between the Progress forums- which are mostly for support and cheerleading, and the Info forums, which are mostly to have questions answered. While all our forums are supposed to be welcoming to all and friendly, this is especially important in the Progress forums, which are not to discuss politics, or be negative towards those fortunate to have their case dealt with quickly, or critical of those who voice sadness about their own slow progress. These forums are there to uplift eachother!
Secondly- in the info forums, you may get bad news. When a question is asked, our members are encouraged to answer truthfully, even if this may not be what the Op wants to hear, because it is important to be informed. However, the emphasis is still on being welcoming and friendly. If you need to give bad news, do so gently, and stick to facts; constructive criticism of the Op's plans ARE allowed, but the emphasis is on constructive. No need to dwell on mistakes (or tell members they should be on 90 Day Fiance- that is a personal attack and automatic suspension), or illegal actions in the past- instead, encourage and explain legal options for the future. And ONLY legal options- as per our TOS, VJ does not support, condone or encourage illegal (immigration) actions, and such posts will be removed.
Ultimately, we are here to help all members, old and new, easy cases and complicated, those who write a fact filled bullet point post and those who are panicking and don't make much sense in their first post. Yes, sometimes questions can be easily googled, or answered via a search of our forums. But if you feel that way, just scroll past- no need to criticise the OP for asking the question.

There have been a lot of issues reported lately with attachments and files not loading or saving when filing the N-400 online. Although the official instructions say that the online form works in most browsers, it works best in Internet Explorer.
If you have issues uploading or saving attachments/files, try again with Internet Explorer. For best results, consider filling out the entire form using IE. Sometimes other browsers such as Chrome or Firefox do work, but Internet Explorer is the one that will never fail.
If you fill out your N-400 online and realize your attachments did not save, re-upload them later to the Documents > Unsolicited Information > Upload Documents section. Make sure all of your uploads are visible under the Documents tab.

We are doing something similar! My finacé and I are currently living in the Netherlands and we have the USCIS mail send to his family, which we will join once the K-1 is approved! So far we had no problems.

So they won't take the federally recognized ID of a green card. And they won't take the passport in the maiden name + a copy of the marriage certificate (a legal name change document)? Very shady...this is not the norm.
