For me, I will wait until early next year for any moments of N400. I-751 is a low priority, so it maybe just sitting there. I don't see any reason for you to wasted $5k, $10k.

Don't complicated yourself:
1. Change address with USCIS ASAP.
2. Submit I-751 early next month.
3. The receipt letter which is the extension letter will send out after USCIS receive I-751.
4. USCIS may or may not re-use the old biometric, so watch out for the biometric appointment notice.
5. Waiting game.

It doesn't matter which name order you put on DS160, the print out name on the Visa will based on the name on the passport. In this case, it will be Thi Quynh Anh Nguyen. Anyone with "ABCD " name will having the same problem. If this was an issue, you can request name change when doing AOS, or go go with that name and request a name change when apply for  naturalization.
