Her interview was today and.... WE'RE APPROVED!!!!! She had to wait a little longer than I expected so I was bouncing off the walls with anxiety but it's done! She's coming home to me.

I feel for the folks who had appointments tomorrow around the world.  All of the embassies are closing for GHWB memorial and they have to reschedule.   

I've been thinking back on all the questions I saw since I joined this forum.    I wrote a summary of my time, and it became a rhyme!  I wanted to somewhere to share, and only you lot would care.  Helps to read it aloud.

Had my interview today, visa approved! They said I should get it next week 

Get the darn thing ASAP, they are easier to change than to get at a later date. The 10 days (2 weeks) is a thing though so wait for that. If you wait till after you are married you are setting yourself up for the potential "wait until the EAD or Greencard is issued" debate. Even though you should be able to get one after you are married and before you get your card, there are just to many cases where people ran into trouble. After waiting this long for the visa and the amount of money poored into it, the extra few hours wait time is not that bad anymore.
Than of to the DMV for the next hurdle.

You left out one option.  Neither.  If she is compelled to mention she can at the interview 

It's probably not an issue at all.

The issue is some SSA staff will refuse to issue an SSN under the new name without an EAD or green card with the new name. It took my wife and I 3 visits to get them to get somebody who could navigate the system to do so.
Some SSA staff will even refuse to issue the SSN under the old name once married, as that is no longer your legal name.
The SSN -> Marry -> New SSN path ensures you get an SSN in the first place with the least risk of hurdles/hassles.

Guess the good news!!! Approved!!! Friday picking up the passport with visa. 
Fiance said it was easiest interview in her life. They just asked her the following:
1. Where is he currently working?
2. When did he move to USA?
3. How did he move? (Under what visa)
4. Where did he propose?
5. How did we meet?
they took only my i-134 and never even looked at Cosponsor. 
aaaand that was that. Ooooooofff feel like a weight of the world came of my shoulders!
It worked!! Thank You!! Same to You! Waiting only for good news!
