I have been an expat for 5+ years now. I applied for my husband's visa in the Fall of last year, and at that time, I was working for a German employer. 

 

I have just accepted a US-based job offer that I can work remotely until we have a resolution on his visa. From my research, this would be strong evidence in our favor that demonstrates our intentions to move back to the US.

 

My question is, should/can I amend our application to include this evidence while we are still waiting on NOA2? Will I have an opportunity to do so once we hear back?

Not necessarily, intent to establish domicile is the bar and it’s pretty low

 

You will assuredly have that opportunity in the context of the support affidavit.  Were you still employed by a German company your income would be considered (zero) and you would either need to qualify on assets or obtain a joint sponsor.  US based income that will continue after you return will put you in a position to overcome that hurdle.

Us based job with employer address will be submitted with the AOS at NVC stage along with your IRS transcripts and other supporting documents 

Important to have proof of US residency like keeping a US bank account, state driving,  license filing taxes while out of the states (even mail sent to parent's home)

Others will chime in on what they did to show intent to establish US residency

This is an entirely true statement.  Although it may be 'pretty low' for many consulates, Montreal is extremely strict about domicile.

There is no need to prove intent to establish domicile at the USCIS stage, this will only be a requirement once your case moves to NVC and you have to file I-864. So no need to add documents now, simply start collecting them in preparation for the next stage.

First, you filed a petition in your husband's behalf.  When your petition is approved, it is your husband who will apply for a visa.  At that stage, you'll provide an affidavit of support.  You can simply state and document your new job at that time.  No need to amend anything now.
