Tips
• Lutfisk can be bought at specialist shops or online.
• Lutfisk is sometimes labelled according to its Norwegian spelling: lutefisk.
• 1 kg of lutfisk is only likely to serve 4 people as a main course because when it is cooked it will release a lot of liquid which will be discarded.
• If serving lutfisk as part of a julbord (Christmas buffet) I recommend serving very small portions as a separate course. Better still, give yourself less work and serve it on another occasion!
• The traditional accompaniments are boiled potatoes, peas, a Béchamel or mustard sauce, a light sprinkling of finely ground allspice, white pepper, black pepper and occasionally fried bacon.
• I recommend serving lutfisk surrounded by peas and a side dish of boiled potatoes tossed in butter. Fry some tiny frozen peas in butter with finely chopped shallots and then adding some chopped herbs (dill, mint or parsley) just before serving.
• I find that when I serve it with crispy pancetta that everyone wants more, so cook plenty of pancetta!

Ingredients
1 kg    (2 lb)    packet of lutfisk
2 tsp         salt
20 g    (1½ tbsp)    butter, plus extra to taste
1½ tbsp         flour, such as cornflour (cornstarch)
180 ml    (¾ cup)    milk, preferably whole milk
120 ml    (½ cup)    whipping cream
3         allspice berries
6         white peppercorns
6         black peppercorns
4         whole cloves
100 g    (4 oz)    sliced pancetta or streaky bacon
Method
1. Preheat the oven to 200°C (400°F, gas 6, fan 180°C).

2. Place the lutfisk in a deep roasting tray. Sprinkle over the salt and cover with aluminium foil. Bake for 45 minutes.

3. After 25 minutes or so, melt the butter in a saucepan.

4. When melted, remove the pan from the heat and stir in the flour and mix to form a roux. Gradually add the milk and cream stirring carefully after each addition.

5. Add the allspice berries, peppercorns and cloves. Heat until boiling, stirring constantly. Simmer for 5 minutes, stirring occasionally.

6. Sieve the mixture and keep warm.

7. Cut the pancetta into small pieces and then fry them until golden brown. Dry on kitchen paper and keep warm but uncovered so they remain crisp.

8. When the fish is cooked, remove 2 tablespoons of the fish stock and add to the cream sauce and then stir in some butter to taste.

9. Place a portion of lutfisk in the centre of a plate, coat with the sauce and garnish with lightly fried peas and crispy pancetta pieces. Serve with a side dish of boiled potatoes tossed in butter and a small dish of finely ground allspice, white peppar and black peppar.

Today instead of posting on VJ I:

  • Went through half a box of Puffs Plus tissues
  • Watched almost a complete season of Holiday Baking Championship (no spoilers please -- I am on the last episode of the latest season!)
  • Drank four large cups of tea and one hot toddy (brandy based, lots of lemon), plus as much water as I could stand
  • Pretended that the large wolf spider that Alex did not successfully scoop onto a piece of cardboard to release outside isn't still lurking somewhere near my sick bed
  • Read a fantastic "Year in Patriarchy" round up in the Guardian :P 
  • Ate two bowls of homemade vegetable soup -- I used that ditalini!
  • Tried to nap but my mom called and wanted to complain about my sister for a while
  • Attempted a walk in the neighborhood but abandoned after a block as being too ambitious
  • Considered rewatching Season 7 of Vanderpump Rules in anticipation of Season 8, and then remembered I am NOT watching Season 8 because my sister and my ex were having drinks at SUR at some point over the summer after the "expensive new t-shirts for her boyfriend" shopping spree, and she (my sister) told me that there was a slight chance that she and the ex might be in an episode because the cameras were rolling at the time they were there. And one thing I do NOT need to see is the two of them on a reality TV show together, even in the background. 

So a pretty full day. Theraflu now and bed.

Wait a minute.  I've been busy and away from CEHST for just a couple of days and missed something.  Last I remember you had a mild stuffy nose and were thinking about going to some party.  So, did you go and infect all your friends?

 

Sorry I have not been keeping up.  Would have gone back to that thread to check, but can't remember which one it was, and they all end up being about you anyway...LOL

I ended up NOT going in the end after thinking better of it and taking everyone's advice here. As it turned out, I got a whole lot sicker as the day wore on. The visiting guest of honor dropped by my place instead on Sunday-- sincerely hoping he and his girlfriend don't catch what I have. Alex is almost completely better now, and is grumbling to me via Hanging about having to do a half day at the office today. He is still not happy about being made to work on Boxing Day. Apparently we are all heathens for working on this Sacred Day of Rest and Football (his words, not mine). I reminded him that if he hadn't insisted on us going to Scotland in October he might have been able to take all of this time off from Christmas Eve to January 6th but that was not well-received.

See? I did the right thing. I told my friend it was up to him if he wanted to see us so I let him decide whether to take the gamble rather than forcing it on everyone else. I mean, Christmas IS a time for sharing but maybe not that way!

Oh dear god the mere thought of wading into the unwashed masses revotls me.  Today is my first day back at work. Maybe some Nyquil and an Ambien.  Sweet Pea I stopped going out on New Years eve several years ago

Not really, had it once as a young one.  Pour on the butter sauce to disguise the disgusting.

 

it seems to be a North American phenomenon because no one in Sweden will touch it. It is a stinky gelatinous fish that they make with lye. Maybe Norway but you have to ask at the market, it is never in the counter.

 

It's not to late to order it, it comes preserved with dry ice. I am not how you can tell if it's rotten.

I am not a big one for New Year's either, never have been. I usually allow myself to be dragged out to something but like last year, I will spend this one eating lovely food and cuddling on the loveseat. :wub:  Alex likes doing the whole NYE thing (Hogmanay in Scotland is a big deal) but he isn't particularly into making me do anything I don't want to (especially if sick).

 

I have found the wolf spider. When I got out of the shower just now, there it was on the wall facing the bathtub. :( I threw on a bathrobe and got out of there as fast as I could. Al will be home around 2 and it will be his job to get it out of the house (I don't feel right killing them, nor does he). So I'd better not have any more coffee or I will be knocking on my landlord's door to use his bathroom!

Nice!!!!!

Wolf spiders are rather intimidating,  but good for bug killing.  I absolutely love watching the little black jumping spiders eat flies.  Good times!
