Review your packet- did you sign everything? Leave anything blank? Use an expired form?

pretty normal. no one can tell what the RFE is for ? some times its medical, public charge etc

they will wait for RFE response before adjudicating your AOS

Your lawyer isn't wrong, you can file for a renewal 180 days before the card expires, and considering it takes around 6 months to get it approved it's not a bad idea to actually file that early.

Like Geo says, you do get an automatic extension of 180 days after the EAD expires if you filed your renewal before the card expired. So for work purposes it's not an issue in that regard. Expect issues with renewal of a DL though. You can try to print the page Geo posted that shows the automatic extension, and also bring the NOA1 as proof you actually filed for the renewal.

As long as you file for an extension of the EAD before it expires, you get a 180 day extension.
There is no fee for this renewal. Include a copy of the I-485's NOA1 in lieu of payment.

DL is a state issue...presumably you could provide them with the EAD renewal notice as documentation that it has been extended and they can use that. But it really is their call...states make their own DL requirements.

She should also take the NAO1 she received after submitting the I-485.

She went on her own this morning. She was able to get a license that will expire at the end of the 90 day process, and was told it could be extended once she files the AOS.

According to this web page he would not need to wait for the EAD.  His foreign passport + the "I-797 Receipt Notice" should suffice.

The Maryland driver license pages say:
Immigrants with temporary lawful status in the U.S. will be issued a limited term driver's license or ID card, valid for the duration of their lawful status in the U.S.

Her proof of lawful stay will be 90 days which will be noted in her passport at POE. When she gets an EAD card valid for 1 year, that will be proof of valid status for a year.

    It also says:
Immigrants, presenting foreign documentation without valid accompanying United States Citizenship and Immigration Services documentation, can obtain a federally noncompliant Maryland driver's license or ID card.  Please visit the online document guide for more detailed instructions.

They speak of issuing a non Real ID license so go visit the page and figure out what to bring.

Forgot to update this yesterday. I was able to pick up my fiancée’s medical results early in the morning and we made it to the embassy a little bit past our appointment time, but we were still able to go through the entire process.

We received the NOA2 on April 8th, and were at the NVC was a little over a month. The Embassy received our case two days after it left the NVC (about a month and a week from receiving NOA2) and we got Packet 3 via email about a week and a half later (about a month and a half from receiving NOA2). From there we scheduled our interview a little less then a month away. So from NOA2 to the interview it took about 2 1/2 months. But I wouldn't schedule anything with your work until the interview appointment is in place.

Congratulations!!!! Now you will enter the USA once you receive the visa and then marry within 90 days. If you do not marry within 2 weeks of arriving you can attempt to get a social security card at the local office. If you do not get a SSN before marrying you will have to wait till you receive your I-765 or green card. Once you enter the USA and marry within the 90 days you will do the following:

File I-485 (Adjustment of Status), I-765 (Employment Authorization), and I-131 (Advanced Parole). I-131 and I-765 do not have a fee if filed with I-485. Also I-765 is for so that you can work and I-131 is in case you need to travel before getting your green card. After that you have the waiting game. Take up a hobby, have date nights and enjoy time together.
