The forms for renewal are the same as the ones you used to apply originally, I-765 for employment authorization and I-131 for advance parole.
Once USCIS receives the applications, her EAD will be automatically extended for 180 days: https://www.uscis.gov/eadautoextend

Once the I-129F is approved and forwarded to the NVC, USCIS has no further part in the process. Not until you get married and file for Adjustment of Status anyway.

Victoria is studying English in a community college school, working in software testing, 32 (where as I am 19, in community college, and in construction), arrived with a tourist visa, and has not committed any crimes here nor in Colombia, and has college education in her country as an accountant.

There's a lot of contradictory information here. What visa did she last use to enter the US? And has she overstayed her current visa or not?
Regardless, I don't see a way for her to get a green card unless you marry her. She'll have to return to Colombia, either now or at the end of her studies, depending on the conditions of her visa.

It's your state of residence that matters, not the state where the marriage took place. From the USCIS policy manual:
USCIS does not recognize the following relationships as marriages, even if valid in the place of celebration:
- Certain marriages that violate the strong public policy of the state of residence of the couple

I'm honestly surprised that in the 2+ years you've been preparing to file the I-130, you haven't come across the differences between CR-1 and IR-1. Also, there are some discrepancies in your post history as you previously said you got married in October 2020, not November. Make sure your husband knows the correct date when it comes time for his interview.
But to answer your question (and as others have already said), you don't choose which one to apply for, it's automatic. Your husband will be issued an IR-1 visa as you've already been married for two years.

Applying for a visitor visa and renewing your ESTA are two very different things. I'm not aware of any questions on the ESTA application that pertain to a pending visa, please let me know if I'm wrong.
