The papers / documents / invitations don't tell the story, you do. What you've told about your plans, your friend, how you met and correspond is reasonable. Be prepared to share the story and bring along anything that you believe may be meaningful in case the officer asks.
Don't shove a bunch of things at them and say "see, this PROVES that I won't stay." Have the brief interview conversation and don't get rattled if you hear the same question rephrased. That's their job. It's what they do day in and day out. The truth doesn't change so it is easy to tell.

If you are planning to marry in July then you have time to get the taxes sorted out and learn what is needed for establishing domicile and petition filing. Once you are married you can begin the filing.

If you want to hold your spouse responsible for a division of assets, alimony, etc. then a divorce in the US is a must.

If you earned over $10K in any of the past 3 years you would need to file US tax returns for those years. You may not owe tax, but would be required to file. That needs to be sorted out prior to the visa interview to avoid delays.

You are not looking at the correct form. Line 22 from the form1040 that KayDeeCee linked above.
For a K1 petition the I-134 is held to the same standards as the I-864. Follow that form instructions and you ought to be ok.
I agree that you should plan on having your joint sponsor prepare the I-134 using the 2015 information.
Assuming that you will also need the joint sponsor for adjustment of status, the same information will be used on the I-864.

Current and continuing income is what is evaluated. 3 years ago will not be an issue. From what you've stated you are well qualified as a sponsor.

You must supply evidence of your fraudulent immigration claims to ICE, not just place an anonymous call.
Perhaps you should approach your HR department to help work things out. That would be the professional way to address the issue.
