The requirements are that you have met in person at least once in the 2 years prior to filing, which you have.

When I applied for my fiance visa in July 2017, I had only met my now spouse once, however, by the time the interview in the Embassy took place, we had met in person 3 times.  Unfortunately it all got delayed because a positive TB test, which required treatment in country and then Covid, so while my K1 visa application was approved in Feb 2018, my now spouse came to the country in June 2021!  During that time I travelled 8 times for a total of over six months of visits and the K1 was approved without issue.

Unless it changed recently (it's been a while for me).

The only requirement for the K-1 is having met once within the preceding 24 months.

The front loading and presenting evidence are very country specific. 

Without knowing where you are from and where you will be applying we can not really advise of what else you might run into.

Meeting fiance only once is likely going to raise eyebrows in some consulates. Additionally, it's beneficial for both petitioner and beneficiary to spend more time together to understand whether marrying is the right thing to do. It can prevent future conflicts and divorce. 

 

Additionally, following the bare minimum effort strategy with USCIS / DOS works for some applicants, but doesn't for many others as they get more scrutiny and experience delays.

@Franklocks2000 I had met my fiance twice before applying. The second meeting, I stayed for 3 weeks with him and his family. We did a lot of activities with his family and extended family. We took a lot of pictures. We talk everyday and have lengthy records. We retained all airbnb receipts when we traveled within Panama with his family and when we traveled just us. We received letters from his family and mine to support our relationship. I tell you all of this so you have an idea of what a plentiful amount of evidence looks like. We have had no questions on the validity of our relationship. These are things to consider when you decide when to apply. It also can matter which location your fiance is from. If they are from a high fraud country, you may want to ramp up more evidence and more time spent together. It is also worth mentioning that the length of time spent together is also a factor. I would recommend looking at the guidelines here on VisaJourney on what evidence you will need to include in your application and decide if you have that or you should wait and get to know your fiance better while increasing evidence.

If you can give the consulate then people can give you more specific info. Also anything unusual about your circumstances (i.e. a 20 year age gap). Then people can advise if one visit together is likely to be enough or if you should plan for more.
