Some get their biometrics appointment a year after filing. USCIS wants it to be done before a potential interview or decision. That means they can ask for your fingerprints at any point, meaning a week from now, or a year from now, or anything in between. So don't go all nuts over that.

Is a I-751 interview a common thing?

I asked a USCIS rep about the interview and he said generally everyone has to go through an interview for removal of conditions. Then I read some official USCIS document stating that all filers after December 10th 2018 have to go through an interview unless waived. Ahhh. Now we gotta prove our genuine relationship over and over again. This was not the case before!

I'm torn between wanting my wife's I-751 done quickly and wanting them to adjudicate both the I-751 and the N-400 together...........

I would much rather getting the i-751 done fast after seeing several posts lately where people try to do both in one and when they show up for the N400 interview it turns out the i-751 isn't even at the office so they can't go ahead with the N400 and are being sent home again.
