    The issues have nothing to do with Ecuadorian laws and everything to do with US laws.  What is legal in Ecuador is irrelevant here.

    Your fiance (USC) having or not having a job in a foreign country has no relevance for the K1.  That is, not having an approved K1 petition did not result in his unemployment, and having an approved petition will not suddenly let him gain employment.
     
    The USC is always allowed to move to the US and find employment there, again, regardless of the K1 petition status.  Because you are not married, there is no obligation for spousal support.  Also, even with an approved K1 the foreign fiance will not be allowed to work and this may cause more financial hardship.  I am stating this in the way USCIS will look at your case, if you decide to go the financial hardship route.  You will have to show evidence how an approved K1 can specifically alleviate the hardship.

    I am not sure this classifies as a dilemma.  If she has not worked then 'none' for her employment history is the truth and nothing else needs to be explained.  There is no supplementary papers or explanation from you required.  Lots of people do not work or have never worked.

    Human trafficking is a concern for sure but also the appearance of human trafficking. At the B1/B2 interview, they'll ask you about your travel itinerary and they won't be impressed with your plan to travel to the States to meet someone you've only interacted with online. 
     
    If you want to continue this relationship, I suggest your boyfriend sorts out his personal reasons and makes a plan to meet you either in Ukraine or a third country. Plan A can be applying for the B1/B2 in July 2022 but you should also have a Plan B in case you do not get the B1/B2. If this relationship is sincere, you can wait another 6 months before meeting in person.

    Sadly her reasons for visiting the US are irrelevant.  She must show strong ties to her home country.  Right now she seems to have stronger ties to the US than her home country.  

    Exactly when, and how old was she, did she leave the US ?

    What else do you have to show strong ties?  A common question "how can you take 3 months off of your job", your answer "I quit my job".  So what else can you show that you must return?
