Average 5-14 days. Ours was delivered Aug 5. Yesterday (Aug 11), I saw early in the morning that they cashed our check. Then late last night (10 pm-ish), I got a text with our receipt number.

UPDATE:
So I sent the consulate an e-mail basically saying I want our K2 to start school here in the US and wasn't sure if they would consider that a reason for an expedited appointment or not and just a couple hours ago my fiance got a call that they approved our request and now she has an interview date for 8/10/20.

Update: Got I-751 acceptance text message today.
Our bank still does not show the check being deposited yet...usually that updates overnight for us.

We sent my wife's i-751 and evidence by FedEx on August 1. Should arrive Tuesday, August 4. Now the waiting begins... again.

I received a text but no email back in April 2019. It only took a few days then (less than a week from when it was delivered), usually they're pretty quick. But seems like things are slower right now.

I'm in a similar situation and part of the August 2020 filers. My package was delivered on Aug 1 to the Dallas lockbox, and I havent received any NOA, yet. Nor has my check been deposited.
I dont think there is a pattern to NOAs, but if you were to scour all the VJ forums and find some stats, and normalize that info, it appears that around 14 business days is the generic timeline one can expect.

Our package was delivered today. According to most people's timelines, I'm expecting our check to be cashed next week sometime.

You definitely need to contact the embassy . . . months ago! Only they can give you the answer you need because Covid has altered their normal rules. Your fiance will probably need a new medical exam and police certificate and perhaps updated income documentation from you Did you address the cause of the 221-G prior to March? Was your reason to delay the interview for 7 months related to something in the 221-G? If so, include that when you contact the consulate.
I wish I could be more optimistic than @Luckycuds, but if the consulates are not processing K1 visas for the remainder of the year, your 7-month delay (August - March) could mean you have to wait until 2021 . . . and that is assuming your petition is not considered to be expired. Maybe you did and didn't mention it, but you REALLY should have been contacting the consulate in March, April, or May. If you didn't contact them, it has now been a year since they last heard from you, regardless of Covid, you may have to start over. I'm sorry - Jason

Regardless of who the father is and whose name is on the birth certificate, you will be financially responsible for mother and child once you submit your adjustment of status application after marriage. Although you don't want to be "legally responsible for someone else's kid," the U.S. government expects you to be financially responsible until your future wife (and her child) becomes a U.S. citizen or 10 years (40 quarters of work).
