Yes you can. It is possible. I did mine mon and tue for medical, cfo on a wednesday and interview on a thursday.
just be prepared. Monday will be so busy in SLEC, have her stay in casa bocobo. I love that hotel.

You can do your med on Monday and interview on Fri. In the event that SLEC does not give him his med results to carry to his interview it will catch up so your delay after interview will be short. Go for it as you have planned.

Embassy states to complete the medical 5-7 working days before the interview.

This is the Philippines that isn't correct.
You can do the interview the next day, true, but the approval will take longer after the interview as the embassy has to wait for the medical to be matched up with the case file (usually adding 2 weeks to the processing). Expect delays with this idea.

Not even close to right for the Philippines, they get all their medical stuff the day they are done at medical. They take it to the interview theirselves, so they can interview the very next day if wanted and planned right.

for manila they give you everything when you're done with medical...you can interview the next day if you wanted, just plan your medical two days before your interview appt.

The Screenshot worked for my wife, but they almost didn't take it. She had to discuss it with them apparently. If you go online you can print off the ready status (just like a Screenshot), that would work just fine. 
 
You can do it in the same week, but it's not advised. You only get 1 free rescheduling, after that you have to pay the fee again. If you have problems or delays in the medical you'd have to wait longer. I think my wife's were a couple weeks apart, which is safer overall. 

We are nearing the end of our K-1 process.  The income requirements for Thailand are different , they do not allow joint sponsorship.   In your situation whether you do K-1 or CR-1  finding someone that trusts you enough to lend you 10,000 or even 20,000 usd   long enough to produce a bank statement showing that account balance.   Keep in mind you will have to produce this twice , once at the start of the process and again several months later with your I-134 statement of support.     As complicated as it sounds it really is just a matter of gathering overwhelming evidence once at the beginning and again at the end of either process.   But as with anything money is an issue.
