So, I logged in online and downloaded my tax transcripts. Can I print them out and submit them as part of my evidence package? Or do I have to get those copies requested and received by mail?

Thank you.

Yes. it is fine. That is what I did - requested online (https://www.irs.gov/individuals/get-transcript), printed and send with the application.
