The K-1 Visa holder is going from where? The Middle East to the U.S.?

 

I have never heard of that. The K-1 Visa is technically a non-immigrant visa but, needless to say, there is an intent to migrate so I don't know why a return ticket would be necessary. Besides, the K-1 Visa holder will not be able to travel outside the U.S. without a Green Card or an Advance Parole.

No. But most people book return tickets cause they’re generally cheaper than one way.

 

My return flights were £400 - a one way ticket was over £1000. I’ll be flying out and then calling to cancel the return leg.

Yeah, buy whichever works the best for you. The only strong recommendations I'd give are

  • Don't buy non-refundable tickets until you (or your fiance(e), if you'll be buying tickets for him or her) have the visa in hand
  • If you do get round-trip (return) tickets, remember to cancel the return leg after you get to the US
