Talking about being nervous. We mailed ours on 5/9, received by CSC on 5/11, check cashed on 5/17, and have not received anything. No NOA1, no bio, nada. zip.

From what I´ve seen looking at timelines the NOA is received within 2 - 3 days after check is cashed. Hopefully it is "just" late and did not get lost on its way. I´ll keep my fingers crossed.

Does anyone know what happens after a year with the work permit? Can we continue working? :/

As far as I know, if your one-year green card extension expires and you still don't have your new one, you can get another extension (which probably won't last as long) by setting up an appointment with Infopass. The stamp they put in your passport is equivalent to the I-551 card and allows you to work and/or travel abroad.
