So it's safe to tell my fiance that the paperwork has been approved? and that we're just waiting for the notification with the receipt number?

No it means they cashed your check.  Nothing has been "approved" yet.  It might be weeks or months before you get any word on the case.  You have a long way to go.  Just take a deep breath.

uscis timeline is just a referral. is trending time statistics so one thing are this numbers and other thing is what really happen to you. this is the beginning of the stress test. I think it is ok to share the real status with your fiance because there are a lot of steps to fulfil and it will help you as a couple.

wish you luck, only the best things will happen to you

Does anyone know how long this whole process will take? I know that it varies but what would you say the average process time will be at this point in my visa journey?

Hard to say, as a lot of it depends on what country you are having the interview in and how long you will need to wait to schedule the interview and medical exam. Could also be longer if your country is known for a longer period of administrative processing after the interview. I would say that since processing times are taking a bit longer these days, the current average wait from the initial filing to point of entry is about 6-8 months. Hopefully things will start to speed up a bit as they finish the bottleneck of filers from the end of 2016.

6 to months doesn't sound too bad  I know one person who was able to come to America from Cambodia within 6 months. But then, I also have a friend who waited for her fiance to come from Cambodia as well but their wait time was 1.5 years. My brother in-law waited 2 years!!! (coming from Cambodia as well). I just hope my case doesn't take up to 2 years :/

Thanks for your input!!!

It is very easy to sign up for updates at the USCIS site. Once your receipt number is in there for the first time, it is a breeze to check it daily. When you finally get that APPROVED status, it is very nice indeed!
