Hi, I am trying to prep my stuff early before I file but so far I have
water bill with wifes name on it
electric and phone bills with both names
car insurance with both names
joint bank account
lease with both names
birth cert, kids birth cert (born here)
joint credit card
heath, dental and vision insurance showing then as beneficiaries
photos (too much)
Itineraries of 2 vacations from the past years
last years tax with both names filing and soon to be this years with both names.
What could I be missing?
I have my green card but I dont have an i797 stating my approval status for it. Should I request one? Or would the green card itself be enough?

it’s not a requirement to send a copy of DS3025, it’s optional. It just lets the adjudicating officer know that you did have your medical already. There are cases where they lose that medical paperwork. It’s rare but it happens.

If You have an interview scheduled you have no opportunity to submit anything before the interview.
You can bring whatever documents you want and you should bring the documents specifically requested in your interview letter.
You are worrying about stuff that you cannot control now.

It's okay if you don't have an SSN. They will fill out a checkbox during your interview that you want/need one.
Your relationship proof is solid, especially the health insurance and lease. You could try to get your name on the utility bills but not necessary.

Financial co-mingling is not as important for AOS as it is for ROC. A direct quote from our IO at AOS interview. "We don't expect you to have much proof of financial co-mingling at AOS as you have been here a relatively short amount of time." My wife was not on any of my bank accounts at AOS because she did not have an SSN. I managed to get her listed on my electric bill and she was on my work health insurance (printed beneficiary page of account) That's all we really had besides some photos. We had no problems at all. But I am an excellent and charming interviewee))) My wife said the IO talked to you more than me.))) Of course all experiences on approval can vary greatly.
In the end you can only give them what they have.

I have the same experience as @boris64. We also did not have much to show during my AOS interview, and the officer was very understanding. We had just opened a joint account (I had received my EAD 6 weeks earlier and had just started working, which was why it made sense to open a joint account), but there was not much traffic on it yet because we were just transitioning to starting to use the joint account for joint expenses. My name was not on any utility bills yet (again, we were still transitioning). We did have health insurance for both of us through my new job, but that was about it. (And my husband was also very charming, so that may have helped too!)
Just bring what you have, anything that shows you are living together and building a life together. The financial comingling will be more important for ROC, but by then you will have more evidence.

It works both ways. I had so much commingling evidence at our AOS interview even the IO said you have more stuff together than people that come in here after 10 years. He was shocked at how much stuff we had ( Multible credit cards, bank accounts, utility bills, deeds, trusts, 401k, health insurance, wills, POA's, Car titles, I even added her to some of my gun registrations, it was a little excessive now that I look back at it). But even he said he was making a note on the file, and just file for ROC when it's time, you shouldn't worry about an interview then, your good to go. So, hopefully I'm golden as I'll be filing ROC in October, but it shows that they really aren't expecting a lot at the AOS interview, especially if you come on a K1 and haven't had the time to really build a history. I had started early before my now wife even arrived here on her K1, so I had a good jump on it. But, I wouldn't worry, sounds like you should be fine.

IRS transcripts / all the information including the W2, tips and receipts has been verified by IRS

IRS Return transcript is usually preferred. If you send the 1040, you must also send all associated W2s, 1099s, and appropriate tax schedules.

Follow the instructions for the I-864: For purposes of this affidavit, the line for Total Income on IRS Forms 1040 and 1040A will be considered when determining income. For persons filing IRS Form 1040 EZ, the line for adjusted gross income will be considered.

Current income means gross pay, so submit a few months of pay stubs and a letter from your current employer. Current annual income is gross pay per pay period X number of periods per year (e.g., monthly gross pay of $3,000 X 12 months = $36,000 per year, if it's $1,000 per week X 52 = $52,000 per year, etc.)

Current income- Recent payslips .. 3-6 of them. Usual current pay amount summed up for the next 12 months. Eg weekly current pay x52, two weekly pay x 26, monthly pay x 12
