I am a little confused regarding the I-134 form. When will this form be needed? Will it need to be presented when my Brazilian fiance goes to the Rio interview? Will it need to be presented to the immigration officer upon arrive in the US? Will it be needed to sent with the AOS stuff (greencard paper work)?

Something else that concerns me is that I am a university student with minimal work history. I would not be surprised if all my part-time and contract work from the last year or so don't add up to reach the poverty guidlines. I do however have my dad which I can put as a joint sponsor. I should also note I am studying a field that pays well on entry-level positions. With the information I have shared, should I be concerned about having the I-134 form present a problem in our K1 approval process?

You are the primary sponsor, and you will need to provide the I-134 with all supporting documentation for her to take to the interview.  This is not optional.

If you have a qualified joint sponsor, they will fill out the same form and provide the same documentation.

After your fiancee arrives, and you marry, you will be submitting the I-865 affidavit of support.  Any eligible joint sponsor who agrees to sponsor her submits the same.

I suggest you thoroughly  read and research this form.

You filed 6 months ago according to your history, and you have roughly a year to go based on the delays.

According to my visajourney estimate, we should get an interview date by April. Are the delays that bad at the Rio embassy?

Honestly the April estimate for I-129F approval isn't all that terribly bad because I-129F is currently taking over 10 months to process, but unfortunately those delays are compounding themselves and the March filers (currently being adjudicated) may easily take up to a year. You can imagine, then, what the wait will be like for June filers.

Note that your VisaJourney estimate is only reflecting the initial petition - the first step in the process. After this comes NVC, which then sends your packet out to Rio, which then must schedule your interview. We have on VJ a compilation of how long it approximately takes to get an interview on each embassy under the "Processing Times" tab.
