Can you stay in the usa while waiting for interview

A friend is here visiting fiance and said embassy is closed in bogota and want to know if the can stay here until their interview comes up

Your friend can stay as long as her authorized stay.  If they overstay their current visa, then it can cause issues.

Not a bit. There is no US Consulate in the United States. If she wishes to pursue the K-1 visa she will need to go home and have the medical and the interview in a country she is legally residing in.

Interview in US? They probably ditched the K1, just got married and applied for a greencard.

If she is subject to the jurisdiction of another consulate then they she can change. Does she have another citizenship?  For example my wife interviewed in Mexico.  But we were living there at the time so she was under their jurisdiction.

First, you can change embassies but only if you are a resident of the embassy to which you want your interview. Second, there are NO interviews conducted for visas in the US. All interviews and approvals come from the embassy which is the only one doing interviews. I'm sorry to say your information is not coming from a reliable source unless of course they or you can produce a document from USCIS, NVC, DOS or your embassy proving the contrary.

Greencard/adjustment of status interviews are conducted in the US. People adjust status from non-immigrant visas all the time... They probably just mixed up the words and called it an embassy.
