The local H-Mart hosts a Korean bakery with awesome milk bread.  They make briochey like hamburger buns in that style. 

 

Checking in with @laylalex , how is the Ramen situation? Temps dropped here yesterday with rain making Ramen a good choice.

started making a sourdough starter and been making lots of sourdough loaves and baguettes, also asian baked char siu bao, vietnamese bahn mi baguettes, real french croissants and pain au chocolate these take ages to make 3 days!

I made tagliatelle in a three cheese sauce with peas, bacon and mushrooms last night. So rich and so, so tasty. Excuse the messiness of the bowl!

It was mostly made up on the fly, but here's a close approximation. Also, it was definitely pappardelle not tagliatelle, my bad. :innocent:

 

Good quality fresh or dried pappardelle, prepared and drained.

 

Four rashers/slices of bacon -- I used back bacon, which I recommend if you can find it -- fried, drained and chopped into roughly 1 inch pieces. Pancetta would work well too.

 

After you fry the bacon, add sliced mushrooms and fry them in the bacon fat that remains. I used half a thing of sliced baby bellas. Deglaze the pan as you go along with some white wine, or water if you don't want to add alcohol. Also... add a knob of butter, probably about a tablespoon. Mmmm, bacon fat and butter! :lol: 

 

After the mushrooms brown, add about a cup of frozen peas and stir. They'll cook fast, and the water in them will help continue to deglaze.

 

Sauce time! Slowly add about a quarter cup of Wondra cake/sauce flour. You'll be making an on the fly roux here. Stir into the buttery mushrooms and peas. Add a little more flour if you think you want more sauce -- I had more than enough for two people and ended up reusing the leftover sauce. Next tip in some half and half or milk or whatever dairy -- I eyeballed it to get the consistency I liked. Maybe a half a cup? Stir stir stir.

 

Cheeses next -- I had shredded parmesan and mozzarella and some grated pecorino romano. Add what you like, but remember the mozzarella will make it very gooey and stretchy. Stir. Add more half and half if you need to make the consistency a little looser; I was out by that point but I had some sour cream in the fridge and added a tablespoon. Came out great!

 

Sprinkle in the bacon, add some black pepper and stir again. Combine the pasta and the sauce in a bowl -- this is definitely one to precombine the sauce and pasta. Store any extra sauce but use it quickly. I think it took me all of 15 minutes to make this and it was so, so good. The sauce comes together very quickly.

Does anyone have any recommendations for pasta sauces that are interesting but low-potassium? I started a new medication this past week and have to limit my potassium -- bye bye mushrooms, bye bye peas, so long spinach. :( Tomato sauces are generally a no go in this house because the other person who eats my food has a nightshade sensitivity -- it can work if I do a long, long simmer (3 hours+). But now I'm sort of limited to pesto at this rate, or just plain cheese and bacon sauce, which isn't so bad, but if you make my recipe above, it is VERY rich. We eat pasta once a week tops, but I want to expand my repertoire beyond spinach or kale pestos, or cacio e pepe, or aglio e olio. Hopefully I only have to be on these meds for 3 months, because I have to eliminate a bunch of things I love, like bananas, chard, broccoli, tuna, and on and on and on....

Unfortunately avocados are very high in potassium :( I had to leave the guacamole off my burrito bowl this weekend, along with the black beans. But thank you!
