First, they prefer that your case is interviewed within that four-month "window" indicated on the NOA2. If it is required, the NOA2 can be extended up to a year by your Embassy but with good reason (a pandemic qualifies) and the Embassy doesn't need to extend the NOA2 for the "one" year from expiration. The new extension, if approved, will be for an additional 4 months. Extensions are in the form of 4-month extension with each approval till you reach one year. If you need to go beyond a year, then you must go to the end of the line and begin the process from I-129f over again and pay the fees. In normal times, you would provide a reason for the NOA2 extension when requesting it from your Embassy.

Timeline

Received our official I-797 (NOA2) in the mail today. We got an e-mail notification on June 4th and received it today on June 9th, so it took about 3 Business Days. It states it will get processed at the NVC within 2-4 weeks (hopefully that still rings true with COVID-19 delays). Not sure how to track if our package has left USCIS and when it will arrive at NVC (trying to figure out @Greenbaum’s helpful instructions for that). I covered our personal details since that’s unnecessary, but I wanted to post here so other can know what it looks like if you don’t know already. I talked to the Embassy of Costa Rica and they told me, if I didn’t had a residency permit there, it’s impossible to issue a police certificate while I was on a tourist visa.

I’m wondering if they come to check at home, what if I’ll not be there at that time😟 🧐

If you can show you left the country, then I see no reason to need a PC from CR unless you were arrested in CR at any time. Baring that you should be fine with no mention of domiciling in CR on a tourist visa.

We have not heard of anyone having a home visit. I am sure it has been done but in rare or with suspicious reasoning would they do any follow-up visits.

Absolutely yes. There are passport stamps enter/exit and boarding passes as well to prove my exit. 
No arrests or criminal records either.

Then you have nothing further to be concerned with including commandeering a PC from CR.
