We got married 4 days after her POE, and filed the AOS/EAD/AP packets (K1 and K2) two weeks later.   It all worked out great.                   

Completed: K1/K2 (271 days) - AOS/EAD/AP (134 days) - ROC (279 days)

Since you have time,  and should file by mid Feb,  you can start now by being on this site and researching all the answers.  Get some manila folders and start gathering and sorting files and documents in advance, and will only have the Marriage certificate to deal with.  It will give  you a chance as well to over over everything twice.  And as others said, don't forget your AP and EAD  with the 485 for no extra fee!  Planning ahead is always the best option!

Out of status = 90 days after entry

File after you are married and before 90 days have gone by

There would be no basis to file for an adjustment of status without being married to a USC.  Suggest you read the guides and USCIS website to get a better understanding of how this works.

Nothing.   As the spouse of a USC,  her "out of status " time will not have any affect on her application

None.  Your wife is in "authorized stay" while the application is pending.  This means she can remain in the US, and work once authorized (receives the EAD) until the AOS is adjudicated.  As long as you married within 90 days of her i-94 expiring, you're fine, regardless of when the i-485 was filed.
