No interview per se.  Standard entry questions really.   Nothing you can't handle

YMMV

So they don‘t look through all the paperwork in the envelope and decide if we‘re allowed to stay??

Normally they send you to secondary and make sure they have everything.

Since you have the Visa(s) they will most likely let you in ;)

What are they gonna ask tho 🧐

They asked Mary her new address and phone number and if she paid the Green Card fee.  Lots of time looking at their computer and putting the stamp on the visa.   Our crossing was land.  Took about 20 to 30 minutes. Only one agent working there also handling other crossers.

At airport I'd still recommend a 4 hour layover.  I travel thru LAX all the time and sometimes they get slammed.

You don't need a phone.  I guess the question was "do you have a cell phone?"  We listed her US based Google Fi number in the I-130.

Their job is to process the paperwork, not to second guess USCIS and NVC by holding a new interview.   That decision has already been made.

Yes they do look through some of it, they did when I moved here at least. I went through with my US citizen fiance, and was never sent to secondary inspection. The officer opened the package right in front of us and asked us questions that he read about in the package. He asked what I had worked with in Sweden and what my husband did for a living, he saw the answers among the papers in the package so he just wanted to see if our answers matched. So yes, it definitely happens that they check these things at POE.

We only got four questions all in all, two for me and two for my then fiance. Very fast process, we were through in just a few minutes.

Everyone says different things because everyone has different experiences because everyone ends up with different CBP officers. So no matter what our experiences were, your may be very different.

And no, CBP officers don't ask for additional documents.

My wife entered in Las Vegas as POE,  she and other K1's were rounded up in a special room,  there carry-on's were inspected, and a short couple of standard questions,  and reminded that they need to be married within 90 days or they have to depart.  It did take a half hour or so before she came out.
