You're worry about the thing that don't need to worry. The SSN will be stored in their database and the person review the file is qualify enough to review it( background check).

by the time immigration is finished,  they know everything about both of u (everything)

also SS# is on the tax returns she has to submit

immigration can ask for bank statements / anything they want ,  you do

If the concern is data being stolen during the actual upload process, know the upload site is secure as it can be.  Probably far more secure than the database that already has her SSN.  Get on with it.
