While adjusting status can you leave at anytime without notifying anyone if you intentions are to not come back?

Would I be questioned when leaving?

You can leave at anytime without being  questioned.

Unless you're on some sort of no-fly list,. there's nothing stopping you from leaving. The issue is getting back in.

Questioned by who? The US does not have immigration counters on exit. The airline can ask stuff, but nothing should prevent you there.

You absolutely can leave without notification. But, be sure you really intend to abandon this process, because that's what you'd be doing.

What is AP??

If you have filed for AOS from a K-1, then you'd need advanced parole (AP) to return to the U.S. and continue the process. Of course, if you're abandoning the process altogether, then there's no need for it.

OK I would be leaving with no intent to continue the process.  Would I be able to come back in 2 years ro so on the ESTA program or would I be red flagged?

Did you file for AOS within 90 days of entry on the K-1 visa? If so, you may qualify for an ESTA still. If not, then your ESTA days are over and you need a tourist visa instead.

Nobody can guarantee entry in a couple years as a tourist....only USCs are guaranteed entry. But it certainly is possible to visit in a few years with a valid ESTA or tourist visa.

Seems OP maybe in removal proceedings and has been here for a year or so.
