This is the first time I get an ad advertising a woman in her late 40's from Ukraine -that btw looks more like a bad AI job-.
The algorithm must be wrong, as all I search is detergent, charities I can donate to and people in mascot costumes getting kinky.

In general, cases are seen as a whole, and depending on the country of origin of the spouse, they might pay more attention to certain details: age gap, religion, etc.
In all honesty, unless one had a postdoctorate and the other was illiterate, I doubt they do care about academic achievements.

I think there's no harm in raising a service request when your case is out of normal processing times. It's done online, for free, and hopefully result in somebody looking at your case again. I'd do it if my plan wasn't to naturalize. So that 10 year GC finally arrives.

I'm not sure if it necessarily was the case before the beginning of this year. Now it does look like a lot of N-400 interviews are being scheduled relatively faster, and I-751 are still unapproved before that. Could be linked to an upcoming election next year.
It's good that you got your extension letter (I assume you got 48-months one?) Gives some peace of mind if you aren't interested in naturalization. They better take an action on your case before this ridiculously long extension is over!

Once you file you'll receive a letter that will extend the validity of your GC an extra 48 months -probably more as waiting times have been increasing-. If the extension letter expired before your case is processed/approved, you can get an ADIT "stamp" that serves as GC. So, as long as you file for ROC you can work and travel.
The average processing time will depend on the service center that will process your case and an interview should not be necessary unless you don't provide enough evidence or are chosen randomly.
