I think the bigger issue is that the I-485 cannot be processed without an I-130. If the petitioning spouse doesn’t want to submit / wants to withdraw, the beneficiary cannot proceed.
 
One solution may be to switch to VAWA, but it’s unclear if the beneficiary is a victim of abuse.

The closest to the interview the better.

Just take an updated Affidavit of Support to the interview.

What do you mean not sure how to explain. You just wrote two pages to explain. Just tell them the same thing, which is truth. They understand circumstances can change between the time you submit the paper and the time of the interview (job change such as yours, people have babies that change their household size, get fired, independents can die, .... ). You are allowed to have changed job. What I would do is fill in another I-864 with the most accurate information as of the day of the interview and take it with you. Just tell the officer "I have a new I-864 with new information, please use this one". 
 
People circumstances can change and do change, a lot.

Some example questions would be:
 
-What is the name of your fiancé/e?
-Where did you meet?
-When did you meet?
-How did you meet?
-When are you planning to get married?
-What is your fiancé/es work?
-Have you gone out of the country?
-How long were you out of the country?
-How many times has your fiancé/e visited you?
-Where did you go when your fiancé/e visited you?
-Do you plan to have kids?
-Where do you plan on staying in the US?
-name and DOB
-what year did you meet
-How did you meet
-what are your fiancé parents' names
-your fiancé's employer and job
-have either of you been married before
-other countries you've been to
-do you have kids together
 
These are some of the questions but rest assure that all the questions will be about the petitioner, the beneficiary, and the relationship. Always tell the truth even if the truth is "I don't know". Don't rush in answering and give a straightforward answer. Look the CO in the eye when answering and smile. Don't give a novel as your answer. Just brief and concise. Don't volunteer any information unless asked, this could send you down the wrong road.
 
Don't forget to ask if you passed.

The questions will be centered around the relationship. So the questions will be geared toward that. Interviews are easy in most embassies as long as you can "prove" to them that you have a genuine relationship and the proof is normally in the answer to the questions they may ask.

My fiancee's interview was today (well, last night for us in America) and she's been approved. Now we wait for her passport with visa to be returned. Despite a certain member basically wishing me bad luck, everything worked out perfectly. This was for Vietnam and she was asked the following 3 questions....
 
1. Where did you meet?
2. What does he do for work?
3. Has he come to visit you?
 
I front loaded a reasonable amount, and she came documentation out the wazoo, in the end they didn't ask for any of it. Those of you still waiting, I wish you the best of luck.

My visa was approved on 16 july2019. I received my passport with the visa stamp today 22july2019. My flight is on 25July2019.

so everything got thru and we are finally together.
 
overall the entire process took just two days over 5 months.
 
We got our K1 visa two days after the interview and flew in the very next day.

The only time that I have seen where the beneficiary's income was used and excepted (which it is not a requirement normally they will not take it from the beneficiary) was when they had over 6 figure bank account in liquid cash. If you as the petitioner meet the requirements then their isn't a worry and all will go fine for you. Keep in mind your mileage may vary.
