Her I-551 stamp in her passport is her temporary green card until she receives her green card in the mail, valid for 1 year. She can get a SSN with this.

But you didn't enter on a K-1, you entered on a tourist visa and applied to adjust status. K-1's qualify for a SSN, you don't.

You can work as soon as you get the card. You just need the card in your hand the day you start work. You'll need a SSN too, hopefully you have that already.

Have you submitted your AOS paperwork yet? If you haven't done so yet, then it is as simple as filling in the paperwork with your new name. If you are taking your husband's name, then changing your name is done simply by using your new name. You use the marriage certificate as the legal proof of name change. You do not need a court order.

The USC needs to send in form I-865 within 30 days AFTER moving, not before. The form is let USCIS know that you changed address. You don't need to inform them prior to moving.
Also the applicant (you) needs to fill in AR-11 (it can be done online) within 10 days after your move date, not before.
When you fill in the AR-11, in theory USCIS will update their records and send all future notices etc to your new address. However some people have found in the past that this doesn't always work, and stuff got sent to their old address. Best to call USCIS after you submit the change of address to make sure they have the new address on file.
Also there is a good chance you will not be interviewed.

The check can be drawn from anybody's bank account, it does not have to be the petitioner's bank account. It just has to be drawn from a US bank or other US financial institution. But it is not made out to USCIS. It must be made out to "US Department of Homeland Security"

You need to wait and use the file number on the biometrics letter, not the NOA1. You should receive the biometrics letter soon.
