Or do the children need to wait for the parents to get their status first?

This. No derivatives are allowed under IR-5 visa category.

Do you know what is the current wait for unmarried adult children of LRPs? Or where can I find it on the USCIS website?

Google "visa bulletin"  Click on the link that shows this month or next month.

You can file for your siblings simultaneously as you file for your parents. Depending on country, it may take 12 to 15 years+

Immigration journey is not: fast, for the faint at heart, easy, cheap, for the impatient nor right away. If more than 50% of this applies to you, best get off the bus.

Hello. If a USC files I-30 for their parents to move to the US as LPR, can I-30s be filed simultaneously for any children the parents have under the age of 21?

Yes, i130 by the USC. Their age and their parents' i130s are not relevant. The USC can file i130 for any siblings whether 1 yr old or 70 yr old at any time.

No need to wait but it makes sense the parents, once become LPR, file petition for their children for relatively faster immigration.
