Truth!  

 

Sous vide is the bomb.  We use it for the perfect medium rare steak and sear off for flavour, once cooked.  We use it for many things but it's also super handy for warming batch cooked items like Bolognese sauce.  We make large batches and freeze in sous vide bags.  Makes for an easy, low effort dinner when all ya gotta do is make some pasta and dump the sauce onto it.

I'd put one on our wedding registry because I'd read about it (a columnist I like occasionally diverts into talking about cooking and raved about it) and sounded like something that was great for lazy guy cooking (also why we have a bread machine -- I love homemade bread, but kneading and keeping track of knead/rise cycles is way too much work) and we got one then.

 

But then I didn't actually use it for a few years until the grocery delivery shopper got a tri tip roast instead of a pack of tri-tip steaks, and my parents were around over Christmas so I thought "hey, let's try this thing out" (and all I did was cover the thing in Montreal steak spice, bag it, and toss it in) and it was amazing so I've been experimenting with that since then (I usually cook the main course on weekends to give PRG a break; have also done something with pork tenderloin, flank steak, and tried a cross rib roast yesterday that was the first thing I kept in all day instead of just the afternoon).

We did Christmas turkey one year.  We have two Sous Vide Supreme machines, so that was helpful, but we brined the turkey in advance, cooked the white and dark meat at the recommended temperature the day before and were able to just warm up and stick under the broiler, as suggested and it was delicious!  

 

I often do chicken with a bit of pesto so it stays moist and tender.  We've done souvlaki and satay skewers, too. I've done roasts that way too - 18 hours in the thing!  We do have a smoker so we'll smoke a giant brisket and cut, seal and warm up later.  Far more useful than I'd ever imagined!

Temperature at bedtime was Many00 + 2 + .Many (.2x2x2 -1), highly unpleasant man.

Temp this morn was Many00 - 1, great relief man.

Temp now normal + .2, greater relief man.

Hoorah for hydroxychloroquine, miracle med man.

 

Mini-B. complaining of chest pains, oh brother man.

Wouldn't even eat his second chickenburger, "hurts to swallow" man.

Gave him antacids, have always helped before man.

Doc says to take him in if no improvement in a couple of hours, sigh man.

Mini-B.'s Monday-eve issues solved with use of antacids, thank goodness man.

 

No fever this morn, thank heaven for HCQ man.

Reported same to Mama T-B., aysheep senior she man.

After relief, Mama T-B. began ordering us around, militant senior she man.

     1.  We were to run Many (2+1) errands for her, we serve senior she man.

     2.  We are to do Many (2+2) things for Uncle T-B., later man.

     Many.  We are to do Many (2+1) things for ourself, important but no time man.

After we ran her errands, she lectured us for another nearly half-hour, shoot us NOW man.

 

Lunch was a Subway*, necessary to settle ourself down man.

     *bought WUOC, financially savvy we man

 

Right after lunch, we collected Mama- and Papa-Ex-Mrs.-T-B. for shopping, promised by we man.

Took them to our favorite local thrift store for Senior Day, major discounts man.

They appreciated this very much, reported Ex-Mrs.-T-B. to we man.

In fact, they want to go back there, but not till next Tuesday, stupid to pay full thrift price man.

 

Amazingly had time for a brief nap, highly necessary zzz for we man.

Immediately retrieved Mini-B. from skool, we retrieve wee man.

 

Din-din was two Hungry Man boneless-chicken din-dins, ingest Two Guys man.

 

Movie night was postponed from Monday, necessary man.

Watched Huckleberry Finn from Many (2x2x2x2x2 -2-2-1) years ago, Disney+ man.

Quite disappointing, sigh man.

However, Many (2+2+1) bowls of Costco popcorn were consumed, ingest Two Guys man.

 

Still no fever at this hour, perhaps over-the-hump we man.
