 Her own information would be visible, she just wants to blur out her mom's SSN?

Government knows her mom's SSN anyway. Believe me, if the government is after someone then they will certainly look up anyone's SSN.

It's just part of the game.  The SS# is going to be on the affidavit of support too.  You can't "blur" it on that, so why bother on anything else?

If she is unwilling to fill out the forms and provide the required un redacted evidence then you can expect not to get a visa.   You are going to need all of this for your interview.

A SSN is needed by lots of organizations for many reasons, so unless her Mom lives like a hermit and has no bank accounts, no health insurance, no job, files no tax returns with the IRS, no credit cards, no driver's license, her SSN is already out there and it can fall into the wrong hands.  Trust me, I know, it's happened to me and there's nothing you can do about it except fix the mess and take precautions.  I even tried to get a new SSN after someone filed a false tax return using my number and you can't, you are stuck with that number for life.  As careful as you might think you are with sensitive information, it's impossible to live in today's world without sharing it for legitimate reasons, and hope it is kept safe.  It seems strange that your wife would not be okay with sending forms with her Mom's SSN to the government.  And if she thinks that "vital information" is somehow only private, she should run a background check on herself using one of the online services--she might be shocked by how much "vital information" is out there for anyone on the internet to see.  It's just part of living in the internet age.

You need to take all the required forms and supporting documents with you to the interview, with complete information, or you risk getting denied or put into AP after your interview.  From your last question, it sounds like your wife's Mom doesn't trust you.  Why is that?  That's a problem that you need to address with your wife and your mother-in-law.  We see this sometimes here on VJ--a co-sponsor does not want to share their tax returns with the person they are sponsoring for a visa--but you'll have to overcome this concern of hers or find a different co-sponsor who is willing to send their documents to you before your interview.  You have already sent her tax transcripts to the NVC, but they may ask to see them in the interview so be prepared for that or risk denial.
