So here's the things I can tell you that /should/ apply to you (your mileage may vary).
 
You are correct, your case should be shipped out to the UK Embassy on either the 14th or 15th of May. Knightsbridge will ask you if you have your Police Certificate in your possession - but you can always claim you have it and book the medical far out enough that you'll have it with you, you ideally should give a week between medical date and interview date, so this shouldn't impact you much anyway - you can always call up and have it moved if you haven't received it yet

Case is in transit to the embassy and should arrive tomorrow. I have my medical exam on Wednesday, and my interview on the 17th!

Things you need:
passport DS-160 confirmation  appointment confirmation email   1x US passport size photo birth certificate ACRO police certificate I-134 and supporting documents from my sponsors   fiance's declaration and both our letters of intent (only if petition was approved 4+ months ago. If so then it's only required from the US fiancé.) That's assuming you have no name changes, military service, prior marriages which require evidence.
 
No copy of the full petition or approval notice is required. They have that in the file.

Possibly, no RFEs. Who knows? USCIS work in mysterious ways!

I checked ceac tracking today and status changed from "at NVC" to "in transit" how waiting times are changing!!

Does this mean it will be sent to embassy in today's shipment? Also, in the message box says "your interview date was provided to you by the national visa center" but I have not received any 

Your procedure depends on what embassy you are processing through. 
This is a general forum though. You will likely find the correct answer for your particular embassy in your regional forum. 
Normally you would use the "tags" to post it there yourself but now that it's posted you will need it to be moved. 
State your embassy and confirm your Visa category please.
