Honestly, I don't think 8 months is a long time to wait for AOS, it is said that it can take up to a year or even more. On the other hand, with the backlog and everything, I would still contact my congress people to speed things along. Even if they say "keep waiting", they will have contacted USCIS and then USCIS knows you have a representative tracking things for you, too, you would be keeping on top of things. It could give them a nudge and help things along.

The medical should be valid when you apply for AOS. Doesn't matter how long AOS takes after that (although they may ask for a new one if it has been a very long time).
Contact all and see who is most responsive and willing to advocate for you. They should have an online form on their websites.

The K1 is a one time entry and expired the day she arrived.
She should travel with her passport, state ID, marriage certificate and NOA 1 from filing AOS, especially going to TX where
they like to pull people out of line and ask randomly if they are a USC as happened to us.

As long as you marry within the 90 days, you can file for AOS at any point after marriage. There is no time limit to file.
After the 90 days of legal status are expired and you have not filed for AOS, you would be out of status and accruing unlawful presence until you file AOS.

We have a weird case, but for the approved I-129F, we just did passport stamps/boarding passes and maybe 3 or 4 photos with dates written under them. That was it. On the other hand our I-130 that we used later on had no evidence. Yep, no chat logs, no front loading, none of that.
My first ring was less than $300 and cz. #truelove. My current one is moissanite. If you've got the cash, you should do whatever makes you happy, but I don't think $$$$ for a ring is going to be quite the evidence you are hoping, especially with that region of the world or anywhere. It could prompt questions of gold-digging or whatever on her part.

Who takes pictures holding dated receipts? That certainly would bring up a red flag? It's as if you are trying too hard not to appear fraud. Sometimes trying too hard not to appear fraudulent can bring unwanted attention.
By the way, fraudulent cases do sometimes involve big money. Some people will go to extremes to get a green card. Also, you could have receipts and then return the expensive items within 30 days. people do that all the time.

I entered the US with a K-1 visa, and we only lived together for a little bit over two months before filing AOS so I did not have a lot of evidence. I sent very simple stuff, really. Keep in mind though that most K-1 entrants do not send any evidence and they are approved just fine. Below is what I sent, we did not even have a joint bank account at the time, I mostly wanted to show that we got married and were living at the same address basically.
Wedding day photos Photos and receipts from the day intention of marriage was filed Fee receipts from City Hall and wedding appointment document Thank you card from friends TD bank letters to the address of shared residence Amazon household account sharing Prime benefits

The AOS + biometrics fee can be combined into 1 check of $1225.
Either "K" is fine, or write in the "1" or whole entry as desired. The I-485 is reviewed by hand so as long as they can read it, it's fine. K Visa Holder No....245(i) is a very limited case that almost nobody qualifies for anymore (you have to had been in the US as of almost 2 decades ago now). My wife answered "No" as a K-1 is not an immigrant visa. My wife used English, but I'll defer on if this is what most people do or not. My wife put her 2 most recent physical addresses for #5-8, then the other addresses she lived at for at least 1 year or longer, per the instructions. It says ""if not already listed above", so we didn't list the address we named in #7-8. Yes. Yes. Better to disclose it and explain it if asked than to not disclose it and think you're hiding it. Read the questions literally and answer them honestly and completely. Yes. -

The I-94 expires and that is it. It does not get extended due to marriage.
You can apply for AOS at any point after marriage. Some people do not file for years, but it is recommended that you do it as soon as possible to avoid potential removal proceedings if there is a run in with ICE and the legal troubles it could cause, and also so that the immigrant can have legal status and have the right to work and travel.
I would say the quasi-status, gray area you are talking about happens after you have filed for AOS and are waiting for permanent resident status, when you are 'in a period of authorized stay'.
I applied for AOS after my I-94 expired and it never came up.

I'm glad this show is finally done so I can state my views.
First off i want to state a disclaimer... I absolutely loathe reality shows. I personally know 3 people that were on them in the past. One family member and two friends. None of them made it to prime time but they told me enough to know that it is part scripted, part manipulated drama by the producers, and part editing. Everyone knows the producers job is to pick the people who will bring in ratings. The "normal" couples are too boring.
Also, like @Mary Lou has revealed there are certain places you can find out more info about the couples. It was revealed a while ago that Darcy and Jesse were no longer together and that Paul was living in Brazil. I didn't want to post any spoilers.
Abbey and Sean (shaking my head with a deep sigh). My wife is from the DR. She knew exactly what Abbey was doing when she mentioned how she met Chris in the DR. I'm glad she came clean on the tell all. It was basically pay for play and Abbey even knew Chris has other girls he takes care of. It is just unfortunate that a girl that young is involved in that kind of life style. But in her situation she felt she had to do what she had to do. It was revealed that Sean has profiles on swinger sites. Apparently he is into watching his GF or wife have sex with other men. Abbey may very well be stepping out of the frying pan and into a fire.
Darcy and Jesse. They are no longer together and Darcy let it slipped that Jesse may have other women he was dating. All for the best. If you saw the tell all their chemistry was static at times. There is more I could say but I feel there is no need to after the tell all show.
Larry and Jenny. This is NOT Jenny's first rodeo. Larry's cousins are correct that she had communication with different men from all over the world while she was talking to Larry. And the Asian dating website that Larry kept mentioning on the show (it was like he was getting paid to same the site's name) wasn't the only dating site she was on. But Larry seems to be happy so let him live his life. Even though most of us on VJ know how this will end up.
Patrick and Myriam. That whole storyline was a lie. Patrick and Myriam were only friends. Patrick is a reality show veteran/seeker. He has been on like 6 other reality shows. Myriam also had auditioned for a reality show. Her audition tape was revealed on reddit. Apparently Patrick found out the producers of 90 Day wanted him on the show and scrambled to find someone to join him. He told Myriam that he was on a show and if she wanted to join him but it was only a short period of time before they start filming. That is why Myriam was saying on the tell-all that she had only found out about him coming to Paris a couple weeks before. Myriams best friend spilled the beans online on the truth because the way the show was going it was making Myriam look bad for not telling Patrick earlier about her "boyfriend". This guy is seeking fame but his antics are over the top with all of the back flipping and #######. Anyway, on to the next reality show, I guess.
Courtney and Antonio. There was a theory that Antonio's apartment was really an AirBnB. Not much to reveal here as you two saw this train wreck. Courtney needs to have a glass of wine and read the book, He's Just Not That Into You. Obviously she was into him more than he is with her. But it is also their personalities. I really do thing Antonio has a carefree lifestyle while Courtney is overly observant. I actually understood when Antonio told Courtney he needed some time alone and left the apartment. I don't know if anyone of you have been in a relationship with a person with a personality like Courtney's but it is absolutely draining when someone tirelessly spends every ounce of their breath complaining about things that simply do not bother you.
Paul and Karine. Ironic that the person who is the most mature, sincere, and level-headed of all the people on this show, including Americans, is a 21 year old girl from a poor village in the Amazon jungle of Brazil. Paul is probably the most undeserving of her but, alas, she is willing to be with him. Paul's criminal past along with his numerous mugshots were revealed on reddit weeks ago. He is a troubled kid with social issues. Seems like Karine knows how to handle him and he seems to be on his best behavior for now. Just think she deserves better, imho.
On a final note. Take these shows for what they are worth. The producers know drama sells. Even if you look here on VJ, every now and again we read threads where there is all kinds of drama, manipulation, and fraudulent activity. But that doesn't represent the majority of us who chose to go on this journey. That is because we aren't here for ratings.
P.S. If you dig deep enough you will find some interesting info on the people of the show. For instance, Anfisa and Jorge from last year's 90 Day Fiance. There is talk that they may get a spinoff show of their own. One reveal is that they did not meet on Facebook. Anfisa was a webcam girl and Jorge was her best costumer. There is even footage of her during one of her shows as proof. This is the secret that Jorge kept threatening to reveal but he is hesitant to do so as it will put him on blast also.

Finally news on my AOS case! Yesterday I got a notification that "new card is being produced", which means my green card has been approved without an interview (adjusting from K-1).
In September though, I received a letter saying that they needed a new medical exam and some proofs of relationship, which I sent 2 weeks later. Finally my case has been approved and I don't have to worry about immigration for the next 2 years.

You have permanent work authorization if you are a US citizen or a Lawful Permanent Resident.
If you hold a two year conditional green card, you are still a LPR, and therefore, yes, you have permanent work authorization.

You have to remember, your green card is just that---- a card.
When the card expires, that does not mean your status expires. Just the physical proof of it.

I would advise you to start looking for jobs so you can get a job offer and expedite your case, also get your senator/congress people involved.
I also waited 160+ days for my EAD, filed one service request, and never got it.
