Do I need updated I-864 for AOS interview?

Do I need to bring either an updated I-864 and/or updated evidence to my AOS interview?

There has been no material changes to husband’s work (still working at same place but received a 5% pay increase).

I have also started working now but assume I don’t add that in?

I would say that depends on how close you were to the minimum when you applied but I wouldn't do a whole new I-864, just bring proof of the raise and your income if you want.

What about completely unable to meet the minimum and having 2 sponsors? They took just one for the initial embassy interview but I've got two. Think they might need updated? Both of their incomes haven't really changed any and both are still committed to sponsoring.

I guess that would depend on how old they are and how much change there has been.

2 joint sponsors? Don't overcomplicate your case. If one of them meets the requirements, ignore the second one. I remember someone that sent 2 joint sponsors (when the spouse/main sponsor also met the requirements) and USCIS sent an RFE because they didn't understand why they sent 3 qualifying sponsors when one of them was enough.

If you're talking about a joint sponsor and a household member of this joint sponsor, then it should be fine, but if one of them already meets the requirements, ignore the second one.

You only need ONE qualified sponsor.

YMMV
