Hello guys!

Question about passport.  My passport expiry date is January 26th, 2021. According to US Embassy in Madrid, I need to have a passport must have at least 8th months validity beyond the issuance date of the visa.

Should I already book an appointment to get a new passport? I'm concerned the passport number will change and will not be the same as the I-129F petition.

Thanks in advance!

Yes obtain a new passport. It’s usually a 6 month validity you need to enter the US but if they are telling you 8 then go with it now.

I'm not sure why you submitted your passport information on the petition, however, "matching" is not a requirement

YMMV

Normally it is 6 months validity to ENTER the US on a non immigrant visa except for "members of the six month club" which allows entry on an unexpired visa.   Spain is on the list.   But if the consulate says 8 months then you are bound by their interpretation.
