Hello! My fiancé and I have been together for 7 years and I have been going back and forth in the US but now I entered with a j1 visa. He finally proposed and we plan to get married before my contract ends with the help of a lawyer. Can we invite my parents to attend the wedding if my fiancé will write the letter since he's the citizen? What are the chances of them getting approved or denied? Thank you!

Of course.  There is no invitation letter or sponsorship for visitor visas though.  Your family will need to apply and be approved on their own merits/ties to home.

They can refuse to even read the letter: "Visa applicants must qualify on the basis of the applicant's residence and ties abroad, rather than assurances from U.S. family and friends. A letter of invitation or Affidavit of Support is not needed to apply for a visitor visa. If you choose to bring a letter of invitation or Affidavit of Support to your interview, please remember it is not one of the factors used in determining whether to issue or deny the visa." https://travel.state.gov/content/travel/en/us-visas/tourism-visit/visitor.html

But if watch some CO at certain Embassies on YouTube, they will also tell you to bring what you think will support your case. 

 

Every Embassy plays by their own rules.
