can my fiance drive our car with her k1 visa while we wait for adjustment of status. What would she need to get her drivers license? or can she drive with her passport

You will need a driver's license to legally drive. Assuming you are using an international Driver's license, you would you need to find out what the rules are for your State.

There are lots of threads out there on driving or obtaining a driver's license while AOS'ing from K1. What she will need to do to get a driver's license will depend on the state. Unfortunately it is difficult to get a license in most states until the EAD is issued because most require the i94 to be unexpired and if it is they will only issue a license that is valid until it expires and k1 i 94 expires 90 days after it is issued - Here is one of those threads

Here in MA you can legally drive with a valid license from most foreign countries for a period of one year. International drivers license is not accepted here. You need to carry your passport and home country license with you. As others have said, check the laws for your state.

As others said, she needs a license. Most states will recognise foreign licenses but only for a set period of time.

Also, you will need to add her to your insurance and I know my husbands carrier did not like my foreign license.
