Curious as to why are you applying under 3 year rule?
My understanding is, unless you had other trips after this 2 year trip, you should be able to apply under 4 day and 1 day rule. This means you typically won't have to prove bonafide marriage and thus providing all of this thick evidence.
I tried updating GE information when I had a conditional GC and extension letter. It won't work, I tried twice at GE enrollment center and got refused. Just let your husband keep using GE line and showing extension letter until 10 year GC received or he's naturalized.
Most likely USC would not be allowed to the interview. However, it's a strong indicator that the marriage is doing well. The presence of USC in the waiting area may move the needle towards approval if IO is in doubt. Don't forget, you're applying under 3 year rule. There's still a chance IO may want to talk to USC spouse.
Caveat here, DV lottery takes into account country of birth. UK citizen doesn't mean OP was born in the UK. OP may need to play from Poland (if it participates and OP was born there)

That is something you won't have to do I would imagine, if your case takes a little longer.

You can travel as long as you have valid extension letter AND physical GC. The letter doesn't extend stamps. If you don't have physical GC, then get another stamp.
Print the Carrier Information Guide to show to airline staff if they're confused. Also, always call for manager, many of them are trained better than others on their team.
Airlines pay a lot of $$$$ if they make a mistake boarding somebody who's not eligible to enter the US. That's why they sometimes erroneously deny people not to take a risk of financial loss.
AFAIK, you can request to convert it to 5 year rule application before your N-400 interview begins. You can bring forms with extra information about travel within 5 years etc.
1. Oath ceremony applies to US citizenship, and not to GC. I'm confused.
2. What exact errors are you seeing? It's not uncommon for GC to take 6 months to arrive. Also, did you change US addresses since you applied for GC?
3. You don't have to wait for arrival of SS card. Fill out the SS-5 form, take it to the SSA office and get a SS card. You have a stamp in the passport proving your status.

Either way I'd rather go to the interview than reschedule. Rescheduling can get the case delayed or stuck in limbo. If you need to come there a day before and stay at a local hotel - you may as well do it.

I'm not a CBP. Usually it's their discretion, so hard for me to tell.
Use common sense. One can bring up to $10000 in the US without declaring it. Would $100 be enough for 2 months? Probably not. Would $9999 be enough? Surely. Can you go lower? Probably. How low? Depends on your comfort and abilities.
1. Yes, it can affect it. But it's been 9 years so it will affect your application less hopefully.
2. The reasons you want to visit the US, your current job, the I-130 petition and what happened.
3. You should answer yes, because it's truth.
A B1/B2 visitor should have:
- Strong ties to their back country
- Enough finances to cover the trip in the US
Otherwise they may be denied entry to the US. Sponsorship by others does not work for visitor visas as far as I know.
