I sponsored my husband who is here in the US on a work visa and has his own health insurance.

I filed for I-130 along with adjustment of status and affidavit of support. One month later gave birth to our son. I have since been on maternity leave and want to take an extended child care leave until next year which will be without pay and without health insurance. I would also then need to apply for Medicaid for myself. as a petitioner if I apply for Medicaid and be without pay for several months, will that hinder my husband’s application?

also do I need to provide a letter from my employer saying I am expected back to work next year.

Make sure to review income levels for Medicaid in your state for the household of three (or whatever is your household size). Yes, your husband's income will be counted when eligibility for Medicaid is determined.

Many employers are letting employees on parental leave stay on the health insurance, some requiring that you pay the employer's share of the premium.  You might want to look into it.  Otherwise, you might look into all the instructions for the affidavit of support; see if you have enough assets to qualify without income.
