Is there a way to file for a K1 visa from outside the US?

Yes, you can file for the K1 petition. You can mail it from overseas. If you can, use a US address (e.g trusted family/friends) for the mailing address section and put  overseas address for physical address section. That way it’s easier to get a hold of correspondence form USCIS. I don’t personally recommend any visa service companies like that, you can do it on your own

Would the USCIS send any documents to that address that i would have to fill out? 

So are the process and the forms really simple? That i could do everything on my own and get it right?

The forms are not that difficult, and unless there are issues like legal troubles, previous overstays, etc.  Take a look at the guides here, it is fairly easy.  I agree with @Boiler if you are already together, why not look at the spousal visa route.  The speed advantage of the K1 has decreased since Covid and the spousal visa is a far superior visa overall.
